Bartlett
Green skin turns yellow as it ripens. Sacramento District Bartletts tend to have a shorter neck than the mountain districts. Mendocino and Lake County Bartletts (Mountain District) generally produce higher sugar and a smoother, cleaner finish than the Sacramento District. Additionally, Mountain pears will start to turn color before the fruit starts to soften. This enables a retailer to display fruit with breaking color, which consistently increases sales, while maintaining good shelf life. Lake County fruit has lighter color skin often with a pink blush.
